What you’ll need

This is a pretty standard, no frills, cookie recipe. You’ll need a few basics as far as baking supplies go and the same applies to your pantry staples. I hope you find you already have everything you need (or can make it work with some minor substitutions).

Equipment

Ingredients

  • Unsalted butter
  • Granulated sugar (I like to use Cane sugar)
  • Egg
  • Vanilla extract
  • All purpose flour
  • Salt
  • Baking powder
  • Unsweetened shredded coconut
  • Dark chocolate chips (sub. any kind of chocolate chips if needed)

Making the Dough

  1. Combine together all of the wet ingredients until light and fluffy. This includes the stick of butter, granular sugar, one egg, and the vanilla extract.
  2. Next, to the same bowl (I know, a sin to some, but I’m not washing an extra bowl) add flour, salt and baking powder; mix until combined.
  3. Lastly, you’ll want to add in the tasty mix-ins. This is the shredded coconut and the dark chocolate chips (though regular, milk chocolate chips will taste great too!).

Baking the Cookies

  1. If you had not started pre-heating your oven while you were mixing the dough, get it preheated now to 375F.
  2. Onto a parchment-lined (or non-stick) baking sheet, scoop your delicious coconut dark chocolate chip cookie dough.
  3. With proper spacing, I usually fit about a dozen per tray and need about two baking trays for this recipe.
  4. Place into your pre-heated oven and bake for about 12 minutes. Watch carefully as you’ll want these cookies to get slightly golden but not quite brown, as they are best just a little chewy.

Serving and Storing

This recipe should yield you about 2 dozen cookies. You’ll want to allow the cookies to cool for a few minutes and then transfer them to a wire cooling rack for at least another 10 minutes. From there, I love to serve these cookies a little bit warm. There are so many ways to enjoy them. These coconut dark chocolate chip cookies taste great by themselves, with a glass of milk, a cup of warm tea or with vanilla ice cream sandwiched in between. You can’t go wrong with these tasty cookies

If you are headed to a party these coconut chocolate chip cookies will fly off your platter. However, if you’ve made these just for your family (as I often love to do) you’ll likely have extras to eat over the next couple of days or to share with friends and family. The best way to store these cookies is to wait until they are completely cooled. I then add them either to a Ziploc bag or a glass Tupperware container. They will last at room temperature for a couple days but I often like to keep them in the fridge for an extra day or two of freshness. I have even frozen baked cookies before and while you do lose a little something during the thaw, I can confidently say they were very much still edible after a couple weeks.

Conclusion

I hope you and your family love this recipe just as much and myself and my family do. Its an easy, go to, sweet treat that can be made in under an hour. We love eating freshly baked cookies for dessert or as an afternoon snack.
